This one is great for Summer. I actually let it marinate while I was at the beach a few hours. And served it with Uncle Ben's Spanish rice.
What you'll need:
3 tablespoons soy sauce
2 tablespoons honey
1 tablespoon vegetable oil
juice of one lime
2 garlic cloves, minced
1-2 teaspoons sugar
Tabasco sauce to taste
red pepper flakes, to taste
1 pound skinless, boneless chicken breasts cubed
What you'll do:
In a small bowl, combine your ingredients, through the red pepper flakes. Mix thoroughly.
Pour marinade over cubed chicken breasts and turn to coat. Cover and allow to marinate for at least 1 hour.
Grill on medium high heat for 6 to 8 minutes per side (fun to put on skewers!), until juices run clear.
